Yumminess

I know, I know, it's been a long time since I posted. In my defense, I had a bit of a busy week at work, dinner with the girls from my old job, and a friend from business school was unexpectedly in town, too. I did manage to make the fabulous dinner you see below:

Cooking Channel is so amazing - there are so many good shows - this recipe is from Emeril's new show: Indian-Inspired Shrimp with Coconut, Chiles, and Tomatoes. The recipe is really quick and easy. I served it with rice with turmeric and some steamed broccoli. The next night I didn't have as much broccoli, so I cut it smaller and added it and some frozen corn to the rice while it was cooking.
